Nettle Fruit Leather

INGREDIENTS

Sugar soaked nettle tops left over from Nettle Cordial making

Fruit!

Spices to taste, we like cinnamon!

 METHOD

1.    Put the fruit in a pan and heat until its all mushy. We tend to use things like rhubarb and gooseberries as we have lots left over in the freezer.

2.    Once mushy add the nettle tops and give it all a good mix up. Don’t over heat at this point as you will ruin a lot of the nutritional value of the nettle.

3.   Using a hand blender give it a good blitz

4.   If you have a dehydrator then spread the mixture out on the trays and leave to dry off for around 8 hrs. If not then spread out over grease proof paper and place in the oven on a very low heat with the oven door open until dried but still a little tacky.

5.    Strain the liquid through a colander and bottle.

NOTE:

You can use pretty much any fruit you have, but things like apples, pears, rhubarb, gooseberries etc work well.

It really depends on your taste buds!
