Simple flat breads

INGREDIENTS

270g Self Raising Flour (GF flour can be used, we prefer Dove Farms. The GF versions dont rise as well so are not as light and fluffy but still good.)

250g Greek Yoghurt (lactose free Greek style yoghurt works just as well if non dairy required)

1 tbsp Olive Oil

1 tbsp honey for sweet or a grind of salt for savoury

Flavouring / colour - We have used the petals from 15 dandelion flowers or finely chopped handful of wild Garlick. You can use pretty much what you want as long as its edible!

 METHOD

  1. Put the flour in a mixing bowl and add your choice of flavouring then give it a good mix before adding the rest of the ingredients and mixing together well. The dough should be fairly damp and a bit sticky (you may need a bit less GF flour and be careful mixing the GF as it is such a fine flour it can go everywhere, certainly don’t do it in a high wind!)

  2. Tip out your dough on to a very well floured surface then roll your dough out into a fat sausage.

  3. Cut into sections and flatten with your hand until about 1cm thick.

  4. Heat up a dry frying pan on a medium to high heat and cook each bread for 2 - 3 mins each side (at least until they are browning). Non GF ones will raise and bubble a bit (this is good). GF ones wont raise as much but should still bubble.

  5. Let them cool a bit and tuck in :-)

TOP TIPS:

  • With the GF version you need to be careful lifting them into the pan and turning them as the gluten is what holds them together and it can be quite crumbly if your not careful. A fish slice really helps to get them in the pan and turn them over without cracking / breaking them

  • You can add things like poppy or nettle seeds to your dough just like any other bread, mix them in at the dry ingredients stage.
